The Summer Medley


What you require:

1/2 kilogram arranged little tomatoes, divided

8 substantial legacy tomatoes, each cut into 8 wedges, pureed

2 vast tomatoes, split and cored

1/2 English cucumber, diced

Line 2 layers of cheesecloth in a colander and place over an expansive bowl. Pour tomato puree over cheesecloth, tie finishes of the cheesecloth and refrigerate medium-term.

Whenever prepared, remove staying fluid from the cheesecloth by delicately squeezing with a spoon (should yield around 4 glasses).

Cover and refrigerate. In the interim, put extensive tomato parts, cut side up on a thwart lined preparing sheet.
